Banana Choc Chip Cupcakes
100g sweetener of choice - Natvia
1 teaspoon vanilla essence
1 teaspoon baking powder
1 cup milk of choice
100g coconut oil or organic butter
200g dark chocolate chips
300g wholemeal flour
Melt the butter or coconut oil.
In a separate bowl, mash the banana and add in the egg, butter, vanilla, milk and sweetener. Stir well.
Add remaining ingredients and stir well.
Place 2-3 tablespoons of mix to each cupcake case (they won't rise much).
Bake for about 15-20 minutes - Keep an eye on them.
Remove from the oven and allow to cool slightly before removing from cases, and placing onto a wire rack.
Best stored in an airtight container once cooled for up to 5 days.
