Comp Friendly Protein Ice Cream
Craving something sweet this comp season?
This plant-based protein ice cream is VERY low in carbs (even lower if you replace the berries for extra ice), low in fat and high in protein!
It’s great for a post dinner treat when dieting, to keep those desert cravings at bay!
1 cup frozen mixed berries
1 teaspoon xantham gum
1 tablespoon cacao
1/2 cup water
In a high speed blender, blend all the above ingredients for 2-4 minutes until mixture doubles in volume and is of a smooth consistency.
Add more ice if needed.
Pour into a bowl and enjoy!
*Optional (if your macros allow it) 1 tablespoon of peanut butter and raspberries to top!
